A Cozy Winter at the Homestead
This winter, I am soaking up the cozy days and nights spent in the kitchen. In winter’s past, I have really mourned summer. And while I definitely do miss it currently, I have really enjoyed this winter more so than other years.
For several years I have loved baking with einkorn flour. One of the best parts of January is looking forward to a fun and PINK celebration for Valentines Days. So this year, I thought it’d be perfect to put my love for baking together with this pretty pink holiday.
I love that these einkorn lemon sugar cookies are higher in protein than traditional flour cookies, and also topped with cream cheese frosting. And, I used my favorite dragonfruit powder to color the frosting pink.
It really is the perfect Valentine’s treat you can feel happy giving to your whole family!

You can easily whip this dough up and store in your fridge between 1 hour and 3 days and then roll them out whenever you’re ready to bake.
Freezable!
Lastly, these lemon sugar cookies freeze perfectly! You can bake and frost them, and store in the freezer. Then pull them out the day you want to serve them. We just did this for our friends who came over to our house for lunch the other day. The kids loved them, and I loved that I didn’t have any cookie prep to do that day!

Tips for Making Einkorn Lemon Sugar Cookies
Einkorn flour absorbs liquid differently than modern wheat. Avoid over mixing the dough, and let the dough rest a bit longer than normal to absorb the liquid.
Feel free to add more lemon juice or zest if you love fresh lemon flavor in sugar cookies!
Make sure to let the dough rest in the fridge for at least an hour so it rolls out and cuts easily.

12 tbsp butter, room temp
1 egg + 1 egg yolk
3/4 cup sugar
1 1/2 tsp vanilla extract
2 tbsp lemon juice
Zest from 1 lemon
2 3/4 cup einkorn flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Extra flour for rolling the dough out
How to Make Einkorn Lemon Sugar Cookies
Preheat the oven to 375 degrees F and line two baking sheets with parchment paper.
In a large mixing bowl, add the butter, eggs, sugar, vanilla, lemon, and lemon zest. Combine with a stand up or handheld mixer until just combined.

In a separate bowl, add the flour, baking powder, soda, and salt, and stir to combine.
Slowly add the dry ingredients to the wet ingredients, mixing until combined.
Cover the dough bowl with plastic or a tea towel and let it sit in the fridge for about an hour. This allows the flour to absorb the liquid and the butter to harden slightly, making it easier to roll out.
On a clean countertop surface, roll the dough out to about 1/4 – 1/2 inch thick, depending on preference. Cut out the cookies, or just roll them into balls, and place them on the trays.


Bake at 375 for 10-12 minutes, or until cookie feels slightly firm but not hard.
Remove cookies from baking tray immediately and place on a cooling rack.
Let come to room temperature before frosting. Serve and enjoy!
Note: I used dragon fruit powder to make the light and dark pink frosting.
Cream Cheese Frosting Recipe
1 1/2 packages of 8 oz cream cheese, room temp (about 12 ounces total)
1/2 stick (4 tbsp) butter at room temp
1 tbsp vanilla
1 cup powdered sugar
Milk, 1 tbsp at a time
Combine in a mixer until the desired frosting consistency is reached. Add dragon fruit powder 2 tbsp at a time until pink color is to your liking!

Yes. I substitute einkorn at a rate of 1 cup regular all purpose to 1 1/4 cup einkorn all purpose, so measure accordingly.
