Einkorn Sourdough  Pumpkin Pancakes

These fluffy pumpkin pancakes are a cozy breakfast made with pumpkin, einkorn flour, sourdough discard, and spiced with cinnamon and nutmeg.

INGREDIENTS

- Butter or coconut oil - Sourdough discard - Maple syrup - Pumpkin Puree - Whole milk - Salt - Baking soda - Eggs - Cinnamon - Nutmeg - Einkorn flour - Chocolate chips

Combine all ingredients except flour and chocolate chips and mix well. Add the flour and incorporate with a wooden spoon.

Scoop the batter into pre-heated cast iron skillets with butter or coconut oil. Cook for 2-3 minutes on each side.

If you're adding chocolate chips, add them while the first side is cooking, before flipping the pancakes.

Serve hot with butter, maple syrup, and a sprinkle of cinnamon. Enjoy!
