Pumpkin Protein Einkorn Muffins

Pumpkin protein muffins are the perfect fall snack! Moist, rich, and packed with nutrients, these are a great healthy muffin option.

INGREDIENTS

- Pumpkin puree - White sugar - Maple syrup - Yogurt - Milk - Coconut oil - Eggs - Vanilla extract - Einkorn flour - Collagen peptides - Baking soda - Pumpkin spice - Salt - Chocolate chips (optional)

1. Combine wet ingredients and sugar in a large mixing bowl. Stir well.

2. Combine dry ingredients in a separate bowl, then slowly add the mixture to the wet ingredients in 3 increments.

3. Line a muffin tin with muffin liners and pour the batter in.

4. Bake at 350 degrees for 20 minutes. Allow the muffins to cool, then enjoy!
