Sourdough Discard Chocolate Chip Cookies With Einkorn Flour

INGREDIENTS

– 1 stick butter – 1/2 cup sourdough starter – 1 egg – 1 tsp vanilla extract – 1/2 brown sugar – 1/3 white sugar – 1 3/4 cups einkorn flour – 1 tsp salt – 1/2 tsp baking soda – 1 1/4 cups chocolate chips

1. To a large mixing bowl add the butter, sourdough starter, egg, vanilla, and sugar. Mix until combined.

2. To a separate bowl add the flour, salt, and baking soda. Stir together with a wooden spoon.

3. Slowly add the dry ingredients to the wet ingredients, about 1/3 at a time, until fully mixed.

4. Preheat the oven to 350 degrees F. Line two baking trays with parchment paper.

5. Spoonful the dough into balls about 1" thick onto the baking sheets. I fit about 9 cookies per sheet.

6. Bake at 350° F for 14 mins. Take the cookies out right before they look done, and they will continue cooking on the baking sheet.
