Store the starter in the fridge when you're not cooking with it. The cold temp in the fridge will slow the feeding way down, so you don't need to feed it every day. When your starter is out on the counter, keep an eye on it. It should be bubbly and active. If it has water on top and no bubbles, your starter is still fine, it's just hungry so feed it.
