Homemade Ravioli Recipe without a Pasta Machine
I’ll be honest, I love all things pasta. My motivation for creating this homemade ravoili recipe was simple: create a pasta dish that uses canned butternut squash (in case you don’t have time to roast your own but still want the benefits).
This fresh ravioli recipe is handmade, uses einkorn flour which is higher in protein and contains less gluten than modern grain, and is filled with a salty savory butternut squash filling. You see me using einkorn for almost all our bread products recently, and that’s because it’s a non-hybridized grain that’s a lot healthier for you. If you use regular flour for this, I would use only 2 cups as the conversion isn’t exactly the same. Enjoy!
Einkorn? Wheat? Celiac?
If you are brand new to einkorn flour and wondering what it is, watch this YouTube video that I think does a good job of explaining it. Basically, our modern wheat grain goes through a process called hybridization, which is the cross breeding of two or more different wheat varieties. I am not a wheat crop expert, but after looking into quite a bit I do know that this process creates a grain that is more difficult to digest since it is stripped of its natural properties.
Einkorn flour on the other hand, is a traditional grain that doesn’t go through this hybridization process. Einkorn flour, which you can find at your local store or on Amazon, is higher in protein and lower in gluten than modern wheat grains. This makes it healthier for you and easier to digest.
Now, you could say that modern, hybridized grain contributes to the increase in celiac disease and other auto-immune issues today. I would tend to agree with that, but of course you also have to look at other toxins in our environment that are causing health problems. I talk more about how to reduce toxins in your home here. But at the end of the day I’m going to buy the products I think are the least toxic and the most whole and natural, and for that reason we chose einkorn for this recipe.
Can I use regular flour instead?
Yes! However, the conversion of regular flour to einkorn isn’t 1:1. So for this homemade pasta recipe I would do 2 cups of regular, all purpose flour if you don’t have any einkorn.
Can I make homemade ravioli without a mold?
I always thought you needed a pasta maker to make homemade pasta, but I decided to make up a recipe that didn’t need a pasta mold so I could make ravioli. To do this, just roll out two sheets of fresh pasta dough the same size and in a rectangular shape. Use a spoon to scoop and place your ravioli filling on one of the pasta sheets, each one about 2 inches away from each other. Then use a food brush to brush a little bit of water in between each filling scoop. This will help the top layer of the homemade pasta dough to stick to the bottom. Place the second pasta sheet on top of the bottom one, and then press a square shape down with your fingers. Then use a knife to cut around each of the ravioli filling scoops, boil, and enjoy. How do you seal homemade ravioli without tools?
In this method I show you how to just use water to help seal homemade ravioli without tools. Dip a food brush in water and gently spread it in a square shape around your homemade ravioli filling. Then place the second pasta sheet on top of the first one and gently press with your fingers around the filling where the water is. I show you how to do this in the video tutorial below!
Homemade Ravioli Filling Ideas
Our favorite is the butternut squash and sage filling. Combine butternut squash, sage, garlic, parmesan cheese, salt, and pepper for a delicious, savory, fall-inspired filling.
Try swapping the butternut squash out for canned pumpkin, sweet potato, or acorn squash. Then change the herb to a rosemary or thyme. Or you can chop up some leftover chicken and throw it in there too. The possibilities are endless!
Homemade Ravioli Recipe without a Pasta Machine – Ingredients
2 1/2 cups einkorn flour
1 1/2 teaspoon salt
3 large eggs
2 large egg yolks
2 tablespoons olive oil
Butternut Squash Filling Ingredients
1 15oz can organic butternut squash
2 cloves garlic, minced
3 TBSP creme fraiche (or you could use 1/2 C finely shredded cheese)
2 TBSP sage, fresh or dry, minced
1 t garlic powder
2 t salt
pepper to taste
Making Homemade Ravioli without a Mold – the Process
Add the flour and salt into a large bowl and stir together. With your hands create a large hole in the center.
In a separate small bowl, add the eggs, yolks, and olive oil and whisk with a fork to combine.
Pour the egg mixture into the hole in the flour and combine everything with a spoon or your hands until a dough forms. At this point, the homemade pasta dough will be very thick. Cover the bowl with plastic wrap and set aside.
Combine all the filling ingredients together in a bowl with a wooden spoon.
Next divide your dough in half and roll out one half into a large rectangle. Use a spoon to place a dot of filling on the dough. Continue until you have rows of filling about 1-2 inches apart from each other.
Using a food brush, brush some water in between each filling dot to help the second dough stick on top.
Roll the the second pasta dough out, also in a rectangle, and place it on top of the first dough (see video tutorial for this). Use your finger to gently press down on the water to seal the two pieces of dough together.
Lastly use a knife to cut the squares around the filling. Remove the squares and place in boiling water for 3 minutes or until they are floating on top.
Top with olive oil, salt, and parmesan cheese and enjoy!
