This instant pot sausage soup is hearty, healthy, and perfect for the winter months. I love using homemade bone broth in this recipe, but if you have store bought bone broth that works too. Pick out your favorite sausage for this recipe. I had just been to the local butcher shop in our area and got some nice Italian ground sausage, but just about any sausage will do. What I love about this recipe is that it makes good use out of the instant pot. You can leave the instant pot on all afternoon and have dinner ready when you get home!
The thing about this recipe is this – good food doesn’t have to be complicated. You can follow this recipe if you want, but the basics of this soup are quite simple. Good sausage, beans, kale, and tomatoes, mixed with a hearty bone broth, and you can’t go wrong. Add extra onion if you’re an onion fan, or extra garlic if you love your garlic like we do.
Why bone broth?
Bone broth has numerous health benefits. But that’s not the only reason I love it. Besides from being rich in collagen which helps support your bones, connective tissue, hair, skin and nails, bone broth also promotes a healthy gut and digestive system. When cooked down for long periods of time, bone broth contains collagen and gelatin, which contain amino acids such as glutamine that supports a healthy inflammatory response. So, we eat bone broth as much as possible. And it’s easy for us too because we make roasted chicken and beef all the time. So to throw those bones in the instant pot and create bone broth is just too easy.
Store-bought Bone Broth
John and I started making our own bone broth when we realized 1) how easy it was and 2) how much money it would save us. We were paying high prices for nice bone broth from brands like Kettle & Fire (~$8 per carton) and don’t get me wrong, it was worth it for us! We wanted the bone broth in our diet. But to think that every week we were throwing away chicken bones when we could have made them into broth is crazy! That’s $8 per week which is over $400 per year. So, needless to say we’re pretty happy that homemade bone broth is in our normal routine now.
I will say that Kettle & Fire bone broth is a good buy. They simmer their bones for over 20 hours, they never use antibiotics or hormones, and the animals are pasture-raised. So if you can’t make your own broth, this is the kind that we buy here at the Homestead.
Other Health Benefits
We eat a lot of tomato, sausage, and kale in our house. If I could have a combination of tomato, bread, kale, and cheese for every meal I probably would! And we get pretty close to that. I love the acidity level in tomato, and it pairs well with so many other ingredients. Also, this recipe includes raw kale which gets cooked in to the soup. So if you’re not a fan of kale but would like to get the health benefits into your diet, this is a great way. Ingredients:
– About a pound of organic Italian sausage
– one white onion, diced
– about a teaspoon of salt, less if you are using store bought bone broth.
– freshly ground pepper
– other seasoning if desired
– several bunches of kale or 2-3 large kale leafs, shredded. Keep in mind these will cook down in the soup
– 2-3 medium sized carrots, chopped
– 3-5 small potatoes, chopped
– fresh garlic – about 2-3 cloves minced
– one can of organic diced tomatoes
– 3-4 cups of bone broth
– Cannellini beans – one can drained and rinsed
– bay leaf
– optional seasonings such as dried Italian herbs or we like Trader Joe’s “Everyday Seasoning”
– touch of balsamic vinegar
– freshly grated parmesan cheese
How to make Sausage Soup in the Instant Pot:
Start by chopping up the onion. Once chopped, turn the Instant Pot on sauté function. Drizzle avocado oil in the pot and add your chopped onion and the ground sausage. Sit and sauté until sausage meat is browned on all sides. Salt the meat and add other seasoning as desired.
Next, mince the garlic, and chop the carrots and potatoes. Shred or chop the kale.
After the sausage is browned, add the garlic, carrots, and potatoes. Go ahead and also add a pinch of salt and pepper.
Add your diced tomatoes, bone broth, beans, and kale. Then, add the bay leaf and a small tablespoon of balsamic vinegar.
Give the soup a good stir and place the lid. on the Instant Pot. Press the Soup button and turn the nob to sealing. Let cook for 2 hours on soup mode, then it will go to warm mode.
Instant pots use high pressure, so wait about 20 minutes until the pressure is released before opening the lid. The instant pot will not let you open the lid until the pressure is released.
Before serving, turn the instant pot back on sauté mode to warm the soup back up to hot.
Serve with warm bread and freshly grated parmesan cheese. Enjoy!
