After making homemade sourdough pasta a couple of weeks ago, I wanted to try my hand at homemade einkorn pasta. It’s the perfect addition to a light summer lunch or a hearty winter soup! Making pasta from scratch is surprisingly easy, and the difference in flavor and texture speaks for itself.
A Simpler Approach

Health Benefits of Einkorn
Einkorn is an ancient grain that has not undergone the modern hybridization process. Because of this, einkorn is substantially higher in many key nutrients versus hybridized wheat.
Einkorn contains 50% more manganese, riboflavin, and zinc, and 20% more magnesium, thiamin, niacin, iron, and vitamin B than regular wheat.
This ancient grain is also higher in protein and lower in gluten. This makes it more easily digestible, more satiating, and overall healthier. Many people who have trouble digesting regular wheat can tolerate einkorn!
In addition to all of the health benefits, I like baking with einkorn flour because of its delicious nutty flavor. I find that baked goods (and noodles!) made with einkorn taste richer, bolder, and fresher.

Einkorn Pasta Ingredients
4 eggs
4 cups einkorn flour
3 tbsp water
How to Make Einkorn Pasta
Add all the einkorn pasta ingredients to a stand up mixer and mix with dough hook. Mix until dough comes together, about 5-10 minutes. If it’s still too shaggy and dry, add a tablespoon of water. If it’s too wet, add a tablespoon at a time of einkorn flour. Alternatively, you can hand mix the ingredients directly on the countertop for about 10 minutes, or until the dough comes together.

Cover the dough with a tea towel and let rest for about 30 minutes.

Once it is done resting, put the pasta dough on a clean countertop surface and cut it into 3 equal parts.
For pasta machine: cut each dough in half again, so you have 6 total parts. Run each part through the pasta machine at the highest setting first, then 3-4 more times at lower settings until you get the desired thickness and shape of your pasta. Hang the noodles to dry on a pasta rack or set them on parchment lined baking tray.
For hand cutting: roll each dough portion out with a hand roller. This requires a little elbow grease! If the dough is sticking, sprinkle it with flour. Use the dough cutter to cut horizontal lines, 1/8″ to 1/4″ for spaghetti or fettuccini shapes. You can also shape the pasta into your favorite noodle shape!

Put the cut pasta on a parchment lined baking sheet or pasta drying rack.

Meanwhile, bring a large pot of water to a boil. Add a small handful of salt.
Cook the noodles to desired texture. Note: if you hand rolled your noodles, and they are on the thicker side, boil for 10-12 minutes. If you used a pasta machine and got the noddles paper thin, they boil for 3-4 minutes.
Drizzle with olive oil and add a sprinkle of salt. Serve and enjoy!
