Why we Love Homemade Burger Patties
I love how the change of seasons brings new recipes and food. My mom always told me to cook with the seasons. I can just tell when the seasons are changing because I start wanting different foods.
This summer, we have been really utilizing this homemade burger recipe at least once a week. That and the chicken tortilla soup, man, even I am getting sick of that one at this point 🙂
You can make this recipe with lots of different meats and seasonings, once you get the hang of how to do it.
And, make these homemade hamburger buns to go with the patties. Now that’s a recipe for a beautiful summer dinner!
The Best Beef Homemade Burger Pattie Recipe
This recipe makes 4 large patties or 6 smaller ones.
1 pound of pasture-raised ground beef
1 egg
1-2 slices of sourdough bread (store-bought or homemade), crust removed. Alternatively, you can use 1/4 cup flour.

2 TB Worcestershire sauce or your favorite BBQ sauce
1 tsp each salt and pepper
1 tsp each onion and garlic powder
Herbs: oregano, thyme, rosemary, sage (whatever you have on hand)
Tools Needed
Mixing bowl
Food processor (we have this small one) if doing homemade bread crumbs
How to Make Homemade Burger Patties
First, add your meat, egg, sauce, and seasonings to a large bowl.
Next, if making homemade bread crumbs, remove the crust off of your bread slices and break the bread up into large chunks. In a food processor, grind the bread into small crumbs.
If using flour, add the 1/4 cup flour.
Add the bread to the bowl with the meat mixture.
Now squish everything together with your hands. The meat and bread should soak up the egg and start to form a patty like texture.
Once all the ingredients are well combined, separate the meat out into patties. We like to do four large patties but you could also do six small ones.

Cook on the grill or cast iron until done. Add cheese, lettuce, tomato, sauerkraut, and pickles for a delicious and healthy summer dinner.

Variations on the Recipe
Smoked Salmon Burgers:
Combine a pound of smoked salmon with the egg, bread crumbs, and herbs. Add homemade mayonnaise or chipotle sauce and combine with your hands. No salt needed since the smoked salmon is already pretty salty!
Tzatziki Lamb Burgers
Oh this one is so good. Combine one pound of ground lamb in a bowl with the egg, bread crumbs, salt, pepper, and herbs. Add extra rosemary to this one. Then, when you go to serve the burger, serve it with this homemade tzatziki sauce:


In a bowl, combine 3/4 cup homemade greek yogurt, quarter cup sour cream, tablespoon olive oil, juice from half lemon, one minced garlic, half tsp salt, one cup grated cucumber, one tsp Italian herbs and one tsp chopped mint. Serve on top lamb burgers or as a veggie dip.
Ground Bison Burgers:
Combine a pound of ground bison with the egg, bread crumbs, salt, pepper, onion & garlic powder, and herbs. Add Worcestershire sauce or BBQ sauce of your choice. This is essentially the same recipe as the beef burger.
Tips for Making Homemade Burgers
Depending on the fat content of your meat and the size of your bread slices, you may need to add more or less bread. Start with one slice, grind it up, and test out the thickness. Essentially the bread is a thickener that lets you form the burger patties. Add another half slice or whole slice if you are having a hard time getting the patties to form. Just make sure you remove the crust first!
If you planned ahead and prepared these before dinner time (I usually don’t), stick the patties in the fridge once you’ve formed them so they can harden up before you cook them.
Don’t forget to make homemade sourdough hamburger buns to go with your homemade patties!

You can also make the salmon burgers with regular salmon (not smoked). We like the smoked salmon because it doesn’t need hardly any seasonings added, and it’s easy to form into a patty because of its texture.
If you don’t have access to freshly caught or wild salmon, try getting canned wild salmon from Azure Standard or Amazon. You can basically do the same process with this canned salmon as you would with smoked.
Make a double batch if you can! These store well once cooked in the fridge for up to a week and you can have them for lunch or dinner the next day.
