Why I love Soups
If you’ve been around my blog for a while you know I love soups in the winter time. Really all year round, because I like to make sure we’re all getting homemade bone broth in our diets as much as possible.
Recently I have really fallen in love with soup making. There is something so lovely about sautéing the onion, veggies, meat, adding broth, herbs, seasoning, and just watching it come together without touching it.
If you are new around here, I am also an avid sourdough baker. Now, sourdough can be hands off in a different way because of the fermentation time. But there are also more factors with sourdough that could throw off your loaf of bread.
But soup? No.. it’s just too hard to mess up. Perhaps that is why I like it so much 🙂
This cheeseburger soup is so cozy on a cold day, but also really does taste like a cheeseburger, making it feasible in the summer months as well.

Homemade cheeseburger soup is savory and cheesy, yet healthy and comforting all at the same time. It kind of reminds me of my chicken tortilla soup recipe, because that one is like a taco in a soup. Well this is just what the title says, a cheeseburger in a soup!

This homemade cheeseburger soup is made with pure and natural ingredients like ground beef, veggies, bone broth, and real cheese. We love that we can use our quarter cow beef for this.

Everything cooks in one pot and is ready in about 45 minutes, making it a great dinner for busy school nights. Plus, with the veggies, protein, and potatoes all in one dish, you don’t have to worry about making extra sides!

Tips for Making Homemade Cheeseburger Soup
Add everything except the cheese and let the stove do the work for you.. you can let this simmer and come back to it later! But, definitely don’t add the cheese until a few minutes before serving as it can curdle.
Use a fatty ground beef (we like at least 20% fat) because it adds great flavor to the soup.
This freezes well! You can even freeze it with the cheese inside. Just place in the fridge to thaw out and simmer on low to reheat.
For the best flavor, use homemade bone broth and shred your cheese from a block instead of using pre-shredded.

What’s in cheeseburger soup?
Ground beef. Just like a hamburger!
Russet potatoes. Gives a thickness to the soup similar to a hamburger bun.
Bone broth. Homemade bone broth is my favorite.
Veggies, BBQ sauce, yogurt, mustard, cream, and of course, cheese. This is where all the BBQ cheeseburger flavor lives! Our favorite is Date Lady BBQ sauce.

Tools Needed
Large stovetop pot or Dutch oven
Healthy Cheeseburger Soup Ingredients
1 lb ground beef (80% meat 20% fat if possible)
1/2 white onion, chopped
2 medium carrots, chopped
2 celery sticks, chopped
3-4 small or 1-2 large russet potatoes, chopped into 1″ cubes
3 cloves garlic
4 cups bone broth
1 1/2 tsp salt (less if using store-bought broth)
1/2 tsp pepper
1 tsp mustard
2 tbsp BBQ sauce
1/2 cup half and half
1/2 cup yogurt
3 cups shredded cheese (plus more for topping, optional)
How to Make Healthy Cheeseburger Soup
To a large stovetop pot or dutch oven heated to medium heat, add the beef, onion, carrot, celery, and potatoes. Stir continuously until beef is cooked and onion is translucent. Note: if using a lean ground beef, add a fat of choice here, such as butter, lard, tallow, or olive oil.

Next add the garlic and saute for 3-5 minutes, stirring occasionally.
Then add the bone broth, salt, pepper, mustard, and BBQ sauce. Stir to combine.

Simmer, partially covered, on medium-low for 30-40 minutes or until potatoes are soft.
Turn the heat down to low and add the cream, yogurt, and shredded cheese. Stir to combine, just 2-4 minutes. Heat until cheese is melted, then turn heat off and serve!
Top with shredded cheese or fresh parsley and enjoy.

Can I make this soup in the slow cooker?
Yes. Brown the beef first, then add everything except the cheese and dairy. Stir those in at the end.
How do I thicken cheeseburger soup naturally?
For a thicker cheeseburger soup, you could stir in 2 tablespoons of flour, or try adding less broth and more yogurt and/or cheese.
Can I make cheeseburger soup without dairy?
Yes. You can skip the cheese or use a dairy-free alternative and add a little extra potato or a splash of coconut milk for creaminess.
