A Cozy Rainy Summer Day
In the last 4 days we’ve picked up our quarter cow of meat, headed to a local farm to get fresh raspberries, and then went to the blueberry patch. It’s been so busy!
Today I really didn’t have a plan for a meal, so I opened the freezer to see what we had. We had made a roasted chicken the night before, so I had a bunch of leftover chicken meat from that. Combining that with frozen peas and some veggies, and whole grain homemade gnocchi, I knew I could come up with a good meal in not too much time!
Last week I shared my homemade gnocchi on the blog, and this is the perfect gnocchi soup to go with it.
If you are new to gnocchi, it is basically a potato based pasta. You can eat it totally plain with olive oil and salt, or toss it into your favorite soup, or cover it with a sauce. The possibilities are endless.
Today I’m excited to share my family’s chicken gnocchi soup. I know your family will love it as much as mine does!

What is chicken gnocchi soup made of?
Chicken gnocchi soup is a creamy, comforting soup made with shredded chicken, soft potato gnocchi, vegetables like carrots, celery, and onion, and a flavorful broth mixed with cream. Many chicken gnocchi soups call for spinach, but it’s not an ingredient we buy often. Instead, we like to pop some frozen peas in this soup!
Can I use store-bought gnocchi?
Yes! Store-bought gnocchi would save time in this soup recipe. Making from-scratch gnocchi is our favorite though!

How do you thicken chicken gnocchi soup?
To thicken the soup, you can use a flour and butter roux, and let it simmer to cook down. Using heavy cream also adds to the richness and thickness.

Chicken Gnocchi Soup with Whole Grain Homemade Gnocchi Ingredients
4 tbsp butter
1 onion, chopped
2 medium to large carrots, chopped
3 celery sticks, chopped
4 cloves garlic, chopped
5 cups bone broth
1 1/2 tsp salt
1/2 tsp pepper
2-3 cups cooked chicken, chopped
1 cup frozen peas
2 tsp fresh herbs or 1 tsp dried herbs- we like fresh thyme from the garden!
3-4 cups of homemade gnocchi
1 cup cream
1-2 tsp flour, for thickening (optional)
How to Make the Best Chicken Gnocchi Soup
Heat a large stovetop pot over medium heat. Add the butter, onion, carrots, and celery and sautée for 5-10 minutes. Then add the garlic and sauté another 2-3 minutes.

Then add the bone broth, salt, pepper, chicken, peas, and herbs. Simmer on medium heat for 20-30 minutes or until veggies are cooked through.

While the water is still boiling, add the gnocchi and cook according to instructions. For homemade gnocchi, boil 3-4 minutes or until it soft to the touch.

Turn the heat to low and add the cream and flour for thickening, if desired, and stir.
Serve with fresh herbs or shredded cheese for a delicious and cozy meal. Enjoy!
