These homemade waffles are made with einkorn flour, and make a great freeze-ahead quick breakfast or snack for later. Inspired by the fluffy texture of Belgian waffles, these can be made in any waffle maker but still have that rich buttery flavor.

TIPS FOR MAKING HOMEMADE EINKORN WAFFLES
Use blueberries or chocolate chips right after you pour the batter into the waffle maker for a sweet, added flavor. Just make sure you don鈥檛 use frozen blueberries. Although I have done this and it does work, it also gives the waffles some added water, which can make them soggy. Use fresh berries if you can.
Because you are using einkorn flour, the batter needs about 10 minutes to thicken. The einkorn flour takes a little longer to soak up the wet ingredients than regular flour. So the batter may look liquid at first, but after 5-10 minutes you鈥檒l see it thicken nicely.
Use a ladle to dollop the batter into the center of the waffle maker. You don鈥檛 need to spread the batter all over the maker, because it will spread on its own when it cooks.
We use level 4.5 on our waffle maker. I鈥檓 using a nonstick waffle maker here which, I have to say, works very well. But I typically do not prefer using nonstick cookware because I think it can be toxic. I have tried a cast iron waffle maker and just didn鈥檛 have success with it. So if you have any other ideas for a waffle maker, let me know! I鈥檓 on the lookout for a new one.
Transfer the waffles to a cooling rack after cooking. This will help them dry crispy instead of soggy.
The waffles last 1-2 days in the fridge, but after that I notice they just lose their flavor and texture. The best way to preserve leftover waffles is freeze them right after you make them. Then just pop them into the toaster and you have a delicious and quick breakfast or snack!
CAN I SUBSTITUTE REGULAR FLOUR FOR EINKORN FLOUR?
Yes, you can. But it鈥檚 not a one-to-one ratio. I generally use about 1 1/4 cup einkorn flour for every 1 cup of regular flour. Since this recipe calls for 3 cups einkorn flour, I would use about 2 1/4 cups of regular flour. This is just an estimate, so I would also suggest eyeballing the dough and you may have to experiment a couple of times before getting it down precisely.

1/4 cup maple syrup
1/2 tsp salt
1 tsp cinnamon
2 eggs
1/2 cup coconut oil, melted and cooled
2 cups whole milk
1 tsp vanilla extract
THE PROCESS
Add all ingredients to a large bowl or stand up mixer and stir until just combined. Do not over mix.
Note: the batter will be more liquidy at first, and this is because einkorn flour takes longer to absorb the wet ingredients than other flour. So, let the dough sit 5-10 minutes to thicken before using. Meanwhile, preheat the waffle maker.
Use a ladle to dollop the batter into the center of the waffle maker. The dough will spread out, so no need to fill the entire waffle maker from end to end. We use level 4.5 on our waffle maker.

This was my first recipe with Einkorn All Purpose flour. I sifted the flour as suggested, but still got clumps. Any suggestions on how to prevent or get rid of the lumps?
