When we are out and about in the mornings, I like to have a quick yet nutritious option for myself and the kids to take on the road. Finding it a bit messy to take a fried egg in the car, this sourdough french toast is my go-to. Packed with protein and healthy grains, sourdough french toast is one of my favorite breakfast staples.

Tips for making from-scratch sourdough French Toast
Try this sourdough French toast with different kinds of bread to find your favorite. We love the sourdough sandwich bread, but the rustic sourdough loaf and the einkorn sandwich bread are tied for second.
This French toast recipe is perfect when your sourdough bread is several days old or maybe just sat out on the counter for too long. Too many times I can count when I made toast for my kids and it sat on their plate for several hours before it got cleaned up. Guess where that uneaten toast went? Yep, in this recipe!
Let the bread slices sit in the mixture for as long as you can to really let them soak up the liquid.
Add your favorite toppings, like chocolate chips, fresh fruit, or maple syrup for a delicious and hearty breakfast.

9×13 inch baking dish (you can use any casserole dish or large food container)

Ingredients
6-8 slices homemade sourdough sandwich bread (note: try this with an einkorn loaf for extra health benefits!)
3 eggs
3/4 cup whole milk or cream
1/2 tsp salt
1/4 cup maple syrup
1 tsp cinnamon
1 tsp vanilla extract (optional)
4-6 tbsp of butter for seasoning skillet
Chocolate chips (optional)
The Process:
Prepare the homemade sourdough bread (we prefer the sandwich bread style for French toast but the rustic loaf works great too). Or, you can use store-bought sourdough bread.
Cut the bread into 6-8 slices. If the bread slices are particularly large you may need to cut them in half.
In a 9×13 dish, add the milk or cream, salt, maple syrup, cinnamon, and vanilla extract. Whisk it all together with a fork.
Place the bread slices in the dish, making sure each one has enough space to soak in the milk mixture. Note: if they don’t all fit in the pan at once, you can soak the first batch and get them cooking while soaking the next batch.
Meanwhile, preheat the cast iron skillet on medium high.
Once one side of the bread slices is fully soaked, flip them over and soak the other side.
Make sure each side has enough time to fully absorb the milk mixture.
Place 2 tablespoons of butter on the cast iron skillet. Add the bread slices, making sure that each one has it’s own space and they are not overlapping.
If desired, add chocolate chips by punching them into the bread. Be sure to do this before flipping!
After 3-4 minutes, or once the bread starts turning golden brown on one side, flip the bread. Cook for another 3-4 minutes until both sides are starting to turn golden brown. Note: you may need to turn your skillet down to medium-low to prevent burning.
Remove from the skillet and enjoy! We like to top these with a big spoonful of butter.
Note: Save your leftovers! Store leftovers in a bag in the fridge, and reheat them by placing them on a preheated skillet for 2-3 minutes each side.
