The Sweet Taste of Summer
If you have been around the blog for a while you know how much I love using einkorn flour. This year I have dove into whole grain einkorn and have really loved it, especially for recipes like pancakes and cookies.
Now, I usually use my sourdough starter to make sourdough pancakes, but there are plenty of mornings that just get away from me, and I forget to prep the batter the night before. That is why I have been loving this plain ol’ fashioned pancake recipe. I don’t feel too bad about not using sourdough, though, because the health benefits of freshly milled whole grain flour (and einkorn too!) are so great. My entire family feels differently after a breakfast like this because it is filling and full of nutrition, as opposed to a breakfast you eat and are hungry an hour later.
With strawberry season upon us, this is a recipe that we have been making nonstop. My kids love putting the strawberries in while the pancakes sizzle on the stove. I know you and your family will love these pancakes too!

Health Benefits of Einkorn
Einkorn is an ancient grain that hasn’t been hybridized like most of today’s highly processed grain.
Hybridization is the process of breeding different types of grain to create a grain that can withstand weather ailments and produce a higher yield crop. This modern process allows people to get grain who may not be able to otherwise, but it also jeopardizes some of the original qualities of non-hybridized wheat.
Einkorn has 50% more manganese, riboflavin, and zinc, and 20% more magnesium, thiamin, niacin, iron, and vitamin B. Ironically these are same nutrients that are synthetically added back to enriched wheat flour to compensate for what we’ve lost in making wheat a high-yield crop. (source)
Einkorn is also higher in protein, making it a much better source of energy for your body.
However, einkorn flour works differently and tastes slightly different than your regular store-bought flour. But that doesn’t mean it’s not delicious. You just have to get used to working with it. That is why I am starting to convert some of my recipes to einkorn, because it’s a healthier grain.

Tips for Making Einkorn Strawberry Pancakes
Let the batter rest for 5–10 minutes before cooking. Freshly milled einkorn absorbs liquid as it sits, creating fluffier pancakes.
Don’t overmix the batter. A few lumps are perfectly fine.
Cook over medium heat so the pancakes cook through before the outside browns.
Fresh strawberries hold their shape best, but thawed frozen strawberries will work too.
If your batter thickens while it rests, stir in a splash of milk before cooking.

This recipe works great with soft white wheat berries if you do not have einkorn. Use only 2 1/4 cups of flour if converting to regular grain instead of einkorn.
You can also use hard white or red berries, or just regular store-bought white all-purpose flour at the 2 1/4 cup conversion rate.
Whole Grain Einkorn Pancakes Recipe

2 3/4 cups whole grain einkorn flour (a little over 2 cups wheat berries if freshly milling) note: if converting to regular all purpose flour, use about 2 1/4 cups flour
2 tablespoon baking powder
3 tsp white sugar
2 teaspoon salt
2 cups milk
2 large eggs
2 tbsp melted butter or coconut oil
1 – 1 1/2 cup fresh or frozen strawberries, thawed, and sliced
How to Make Strawberry Einkorn Pancakes
Makes 14-16 pancakes
In a large bowl, whisk together the whole grain einkorn flour, baking powder, sugar, and salt.

Add the milk, eggs, and melted butter (or coconut oil). Stir just until combined. Gently fold in the sliced strawberries and let the batter rest for 5–10 minutes.

Heat a lightly greased skillet or griddle over medium heat. Scoop about ¼ cup of batter for each pancake. Cook until bubbles begin to form on the surface and the edges start to look set, about 2–3 minutes. Flip and cook for another 1–2 minutes, or until golden brown and cooked through.

Serve warm with butter, maple syrup, and extra strawberries, if desired.
