Finally… hot homemade porridge!
I’ve been wanting to experiment with hot breakfast cereals for a while now, but wanting to avoid most store-bought cereals, I realized I needed to make it from scratch. That’s how it was done back in the day anyways, so I know it’s better that way!
Now that I have a grain mill, I couldn’t wait to make freshly milled cream of wheat.
Cream of wheat is a type of hot cereal, like porridge, made from stone ground whole wheat.

Last week I was determined to make some new breakfast recipes with my freshly milled flour. I developed a recipe for freshly milled buttermilk pancakes, freshly milled buttermilk biscuits, and now this freshly milled cream of wheat. My husband and kids were highly complimentary of all three of them, which was super exciting to me!

Homemade Whole Grain Cream of Wheat Ingredients
Serving size: 2-3
Freshly Milled Cream of Wheat Ingredients:
1/2 cup hard red or white wheat berries (ground on coarse setting)
2 cups milk (you can also use water)
1/2 tsp of salt
Add ins: cinnamon, nutmeg, fresh fruit, butter, brown sugar, maple syrup, nuts, etc
How to Make Cream of Wheat with Freshly Milled Flour
Grind the wheat berries on a course setting. On my grain mill, I turn the knob to the left for a courser grain. If this is your first time adjusting this setting, test it out with 1/4 cup of berries in a separate bowl before making this recipe.

Combine the freshly milled flour with the milk in a medium size saucepan on the stove. Stir to combine.

Turn the stove on medium, heat and stir. Add the salt and spices or maple syrup, if using.

Cook 10-15 minutes on medium, stirring frequently. Your cream of wheat is done when most of the milk is absorbed. Remove from heat and let sit for 5 minutes or so until thickened.
Top with fresh cream and fruit, and enjoy!

Can I use store-bought flour instead of freshly milled flour?
No, you want to use a stone ground wheat like freshly milled hard or white wheat berries for cream of wheat. Store-bought all purpose flour removes the bran and germ of the grain, so it results in a very different texture and would not yield the right consistency for cream of wheat.
What’s the best way to serve this homemade cream of wheat?
Serve cream of wheat with fresh heavy cream if you have it (even better to use raw milk cream from a local dairy). Then, add toppings of choice, like fresh fruit, nuts, brown sugar, spices, maple syrup, coconut flakes, etc.
Can you store leftovers for later?
Yes cream of wheat can be stored in the fridge however it will start to thicken and dry up. When reheating, add more cream or milk to get it back to its original consistency.
