This meatloaf is one of our favorites. I love that it is moist from milk or homemade bone broth, uses up egg and also freshly milled whole grain flour, and I especially love how easy it is to whip up.

Uses up our ground beef! We are the kind of people who always have a quarter cow in our freezer now. I officially cannot meal prep without a freezer full of ground beef. It’s just so versatile and easy to cook that it has become one of my favorite pantry staples.
This is quick to whip up, which I always appreciate. So many times a meal sneaks up on me, and I am thankful to this blog for a reference of what I can make quickly.
Great for leftovers, sandwiches, and freezer meals. You can freeze the meatloaf mixture raw and shaped, or you can bake it and freeze it cooked. Either way, it comes out great.
Tastes like summer. Use up all your summer veggies and herbs in this easy most meatloaf recipe.
Easily doubles or triples for freezer storage or to serve to a crowd!

Tips for Making From Scratch Homemade Meatloaf
Make sure to thoroughly thaw out the ground beef, if frozen, before making the meatloaf.
You can make the meat mixture and store in the fridge for 2-3 days, or in the freezer for up to 6 months for a quick meal ready to bake.
This recipe is pretty simple because that’s how we like it, but you can get creative with veggies, herbs, and sauces to add to this meatloaf. I’m not a fan of hot sauce, but my husband is and he puts a ton of it on his meatloaf!

Large bowl
Easy Meatloaf Recipe with Ketchup Glaze
1 lb ground beef
2 tsp onion powder
2 tsp garlic powder
1 tsp fresh chopped herbs or dried herbs (we like rosemary, sage, thyme)
1/3 cup milk or bone broth
1 1/2 tsp salt
1 tsp pepper
1/2 cup parmesan cheese
2 tbsp BBQ sauce (we love this one, sweetened with dates!)
1 large farm fresh egg
1/4 cup freshly milled whole grain flour (you can also use regular flour)
Ketchup glaze:
1/4 cup ketchup
2 tbsp bbq sauce
1 tbsp brown sugar (optional)

How to Make Moist Meatloaf
Preheat the oven to 350°F and line a loaf tray with parchment paper.
In a large bowl, add all the meatloaf ingredients (except the glaze). Then, use your hands to squeeze and combine everything together until thoroughly mixed. Do not over-mix (this can lead to a denser meatloaf).

Shape the meat into a loaf shape and set inside the parchment-lined loaf pan.

Drizzle the glaze ingredients on top. Then use a spoon to combine and smooth it all out so the top of the meatloaf is fully covered.

Bake 50-60 minutes or until internal temp reaches 160.
Let it sit for about 10 minutes, or until you’re ready to serve, to preserve the moisture inside.
Slice and enjoy!
