Every kid loves to get sweets from the grocery store. As much as I try to keep them (the sugary stuff) out of my house, the kids can’t help but see things like ice cream sandwiches in the freezer isle and want to try it.
So the other day I finally said yes to trying one. And guess how much it was? $7. Yes, $7 for ONE ice cream sandwich (which we all split)! Now, a caviet to say that this was an organic ice cream sandwich. So, it had no corn syrup, no artificial flavoring or coloring, and was made with high quality ingredients.
But still, I knew I could make it for WAY less. And if there’s one thing for sure I know about my kids, is once they get excited about a dessert, they will request it every night. So, that’s when this recipe was born!

Tips for Making Homemade Ice Cream Sandwiches
You can use store-bought ice cream for these. But, I much prefer homemade. Try it with homemade vanilla ice cream or get creative with pumpkin or raspberry ice cream for a special treat!
When assembling the ice cream inside the cookies, you have to work quickly or the ice cream will melt. Handle the ice cream as little as possible so as not to warm it up.
Remember that these ice cream sandwiches are big! With two cookies and ice cream in the middle, they are big enough to share between at least 2 people (or more if they’re for kids).
These homemade ice cream sandwiches are perfect for freezing and enjoying later. To freeze, wrap each one individually in plastic and store in the freezer so they can last a good while.
When making homemade ice cream, feel free to get creative with your milk. We like to use whole goats milk when we have it, but regular whole milk works too.
To save time on prep, make the ice cream the day before you make the cookies and store it in the freezer.

Homemade Vanilla Ice Cream Ingredients
2 cups heavy cream
2 cups whole milk
3/4 cup cane sugar
2 TBSP vanilla extract
1/2 tsp sea salt
2 egg yolks
How to Make Homemade Vanilla Ice Cream
In a medium size stovetop pot, combine the heavy cream, whole milk, sugar, vanilla, and salt on medium low. Stir with a fork and heat just until sugar is dissolved. Do not overheat.
Remove from the heat and let cool 10-15 minutes. Then add the egg yolks and whisk with a fork. Place the mixture in the fridge to cool completely.
When ready to make ice cream, pull out your ice cream maker bowl from the freezer (it should be pre-frozen in the freezer before starting the ice cream). Place the bowl in the ice cream maker, pour the mixture in, turn it on, and wait! Ice cream is ready when mixture is thickened and filled all the way to the top (about 30-45 minutes depending on the temperature in your house).

Remove ice cream and store in a freezer safe container.

Makes 6 large (shareable) ice cream sandwiches
Wet ingredients & sugar
1 stick butter, room temp
1 tsp vanilla extract
1/4 cup brown sugar
1/3 cup white sugar
1 egg
Dry ingredients & milk
1 1/4 cup einkorn flour (you can also use 1 cup regular all-purpose or whole-grain flour)
1/2 cup cocoa powder
1/2 tsp salt
1/2 tsp baking soda
1/2 cup whole milk
How to Make Homemade Ice Cream Sandwiches
If you haven’t already, make your ice cream. Follow the directions in this homemade vanilla ice cream tutorial. Store the ice cream in the freezer for now.
Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
Add all the wet ingredients & sugar to a large mixing bowl. Mix with hand beaters or a stand up mixer.
Then add the dry ingredients and milk and mix until combined. The dough will seem more wet/sticky than you may be used to with regular cookie dough.
Using an ice cream scooper or large spoon, scoop 12 scoops of batter onto the baking sheet. Try to flatten them as you don’t want a round cookie for the top and bottom. Also try to make them about the same size each.

Bake at 350 for 10 minutes. Remove from the oven and place the tray with cookies on it in the freezer 15-20 minutes to cool down.
Now assemble the sandwiches. Note: it’s helpful to use your hands to shape the ice cream inside the cookie sandwich. However, once you touch the ice cream, you have about 10 seconds until it starts melting, so work quickly! Once you put the cookie on top of the sandwich, press down gently to flatten it. Once the cookie is assembled, wrap it in plastic and place in the freezer right away, until you’re ready to enjoy it. Enjoy!

At least 2–4 hours for them to firm up properly, though overnight is safer.
How do I prevent the cookies from getting soggy?
I find that partially freezing the cookies before assembling works best. And as soon as the cookie is assembled, wrap it tightly in plastic and get it in the freezer right away.
