Hot Summer Days are Coming!
I’m writing this in early April, but I’m definitely thinking about mid-summer months.
Even my kids are on board! The sun came out the other day and they immediately asked for homemade popsicles and ice cream.
I always love freshly picked berries in the summer. To make a seasonal dessert, we love homemade raspberry ice cream in the summer and then pumpkin spice ice cream in the fall.
This vanilla ice cream is just so simple and good. My husband asked to use this for homemade ice cream sandwiches, which is my next blog post coming out soon. I’ll link when it’s ready!

Health benefits of homemade ice cream
I’ve always loved ice cream, especially in the summer, but I started to have concerns about buying it from the store.
When I became a mom, reading ingredient labels became even more important, and ice cream became a lot less appealing! In your average store-bought ice cream carton, you can find high fructose corn syrup, artificial flavors and dyes, a wide variety of gums, and other additives that I don’t want to consume.
There are a few brands with better ingredients, but they can be quite pricey! I prefer to make my own from scratch. Not only is it more affordable, but I can hand-select the quality of each ingredient. Plus, homemade ice cream tastes so much better!
This simple ice cream recipe is made with just cream, milk, sugar, eggs, vanilla extract, and sea salt. Compare it with the long, complicated list of ingredients in ice cream from the store and you’ll be so glad you’re making it yourself!

Homemade Vanilla Ice Cream Ingredients
2 cups heavy cream
2 cups whole milk
3/4 cup cane sugar
2 TBSP vanilla extract
1/2 tsp sea salt
2 egg yolks

How to Make Homemade Ice Cream
Combine all of the ingredients to a large mixing bowl. Whisk with a fork until everything it thoroughly combined.
Note: If you are using an ice cream maker, make sure you have pre-frozen the mixing bowl before starting the ice cream. I put mine in the freezer the night before with a plastic bag over.
Add the vanilla ice cream mixture to the ice cream maker with the frozen bowl inside.
Run the ice cream maker for 30-45 minutes.
Serve with an ice cream scooper and enjoy! Or, use your vanilla ice cream to make homemade ice cream cake.
