Sourdough is just really fun to make. Once you start making your own bread, you then dive into bagels, pies, and pizza crusts. Before you know it you are thinking about how to turn everything into sourdough. On the weekend, you’re whipping up sourdough biscuits for brunch and sourdough cookies for dessert.

Having Fun in the Kitchen
I always used to focus on preparing one meal a day – dinner. After work I would stop by the local store, which luckily was right next to my city apartment, and pick up whatever looked fresh. I loved the feeling of “farm to table” even though I didn’t have a farm around me (read more about how to start homesteading no matter where you live, here)
I usually just stuck with the good old roasted chicken recipe, which is still one of my favorites to this day. I didn’t have much money back then and this would last me several meals so it was a win in my book. Once the weekend rolled around I would head over to my parents house because let’s be honest, I was out of money and out of food.
Now that I am a new stay-at-home mom, it’s not one meal a day anymore, it’s three! At first this felt a little daunting, but quickly I got my vibe in the kitchen and it’s feeling so good. Now if only I could get the recipes out on the blog as fast as I can make them for my family!

Benefits of Fermented Grain
I thought bread required some fancy yeast and other ingredients to make it rise, which is actually not true. The original way of making bread uses sourdough starter to ferment the grain, which is what gives it that sour taste. Fermenting grain also allows all the good bacteria and cultures to thrive in your food, which is good for your gut and overall health.
The problem with today’s modern food processing is that a lot of food in the grocery stores is highly processed and the good bacteria that once existed in the food is removed. For example, pasteurizing milk is done to keep it more shelf stable and remove any bad bacteria, but it also removes all the good bacteria. Unfortunately this “solution” also causes problems, as it makes the milk more difficult to digest. Lots of people have gluten or dairy sensitivities now, and this could be caused by lack of fermented foods and ultra-pasteurizing our milk.

Why Einkorn Flour?
There are many reasons to choose einkorn as your baking staple, but I’ll share just a few with you. One of the main reasons einkorn is so amazing is that, while its not a gluten-free flour, it doesn’t contain some of the proteins people who are sensitive to gluten can’t digest. Many people with gluten sensitivities can easily digest einkorn with no allergic effects.
Another reason I love to use einkorn is because its packed with nutrients such as vitamins A & B6, zinc, potassium, iron, and riboflavin. It also contains 30 percent more protein than standard wheat flour, making it a win-win in my book! I love having this nutrient-dense option when baking for my family.

Tools Needed
Stand-Up Mixer (you could also use a large bowl and your hands)
Rolling Pin
Cast Iron Skillet (ideally you would use 2 skillets since this makes 2 pizzas)
Sharp cutting knife or dough cutter (I prefer a dough cutter)
Spatula
Sourdough Einkorn Pizza Crust Ingredients
1 cup sourdough starter (could be fed or discard. I prefer using fed starter and letting this ferment, that way you get the benefits of fermentation)
3/4 cup warm water
1 1/2 tsp salt
3 1/4 cups einkorn flour (I get mine from Amazon)
Avocado oil
Seasonings of choice – we like salt, garlic, powder, and Italian herbs
The Process
First, combine the starter, water, and salt and whisk together with a fork.
Next, add the flour and use a dough hook or your hands to combine. Mix for several minutes until a consistent dough is formed.
Let the dough rest for at least 30 minutes before using. For full benefits of fermentation and a softer, more fluffy dough, let it sit 4-6 hours on your countertop. You could also let it sit out overnight or put the dough in the fridge up to 3 days.
Preheat the oven to 450 degrees F and place both cast irons inside to preheat as well.
Lightly flour a clean work surface. Cut the dough in half using a dough cutter or sharp knife. Gently roll out the dough in all directions, trying to make a good circle.
When the cast irons are ready, carefully remove them from the oven and drizzle them with avocado oil. Place the dough inside and carefully fold over the corners to create a crust.
Drizzle the dough with avocado oil and add seasonings to taste. We like drizzling with a good amount of salt, garlic powder, and Italian herbs.
Place the cast irons in the oven and cook for 10 minutes.
Once crust is cooked, add the toppings. We like tomato sauce, cheese, ham, and pineapple for a Hawaiian pizza. You can use any toppings you like – this is a great way to make use of any leftover produce or deli items you may have in the fridge.
Place back in the oven and cook an additional 10 minutes.
Use a spatula to remove the pizza from the cast iron onto a cutting board for serving. Enjoy!
Hawaiian Pizza Ingredients
To make this a Hawaiian pizza, add the following:
Tomato Sauce (you could use pasta sauce or pizza sauce, or make your own!)
Shredded cheese
Ham (I use deli sandwich meat and slice it up into cubes)
Pineapple (fresh or frozen works. If frozen, let it thaw out before baking)

FAQs:
Can you use sourdough discard for pizza crust?
Yes you can. Sometimes if I am short on time or didn’t plan on making this, I will use sourdough discard. You can whip it up right away and you don’t have to let it sit and ferment. However, it won’t have the benefits of fermented sourdough, and it may not be quite as fluffy. But it’s still tasty and totally doable in a pinch.
Is einkorn flour good for pizza?
Einkorn flour makes a nice pizza crust. It’s rich flavor combined with the high quality grain makes it chewy on the inside and crispy on the outside. Even better is if you ferment it with sourdough to make a sourdough pizza crust, which is why I like to use einkorn in this recipe.
Can einkorn flour be used for sourdough?
Yes, you can use einkorn flour in your sourdough starter and your sourdough recipes. However, it’s not a 1-to-1 conversion with regular flour. You typically need about 25% more einkorn flour than regular all purpose, but that can depend on the recipe. This recipe uses einkorn flour for pizza crust, but I have a regular flour sourdough pizza crust recipe here if you don’t have einkorn.
Can you freeze einkorn dough?
Sure can! I just threw a sourdough pizza crust dough in the freezer a couple days ago. Sometimes I make a dough and then our plans change and I can no longer make whatever I was planning to make. If I can make it in the next couple of days, I keep it in the fridge. But if it’s longer than that, the dough could over-ferment, so you can store it in the freezer. I wrap it in BPA-free plastic wrap first and label it so I don’t forget what I made 🙂

Notes
If you have time to let this recipe ferment, I highly recommend it! It'll yield a fluffier, tastier dough. But if you're in a pinch you can just make this and cook it right away, too.
