A Sourdough Christmas at the Homestead
With all the cookies, candies, icing, advent calendars, candy canes, etc that float around this time of year, sometimes I’m just really looking for a good brownie recipe.
I was excited to work on several sourdough recipes this year, including my sourdough einkorn sugar cookies with homemade meringue powder, einkorn sourdough dinner rolls, and sourdough chocolate cranberry brioche rolls.
You should see my freezer! I’ve been freezing like crazy knowing that when the parties and festivities break out, I’ll be ready 🙂

Why We Love these Sourdough Einkorn Brownies
From-scratch ingredients. The more I learn how to convert store-bought treats to from-scratch, the more I realize how important it is to know the ingredients going in your food. There are many ingredients like food dyes, artificial colors and flavors, preservatives, additives, and other non-food ingredients that go into store-bought food. Rest assured, these sourdough einkorn cranberry brownies have ingredients you can be proud of.
Double-chocolate. First we have cocoa powder, then we have chocolate chips or crushed chocolate bar. It doesn’t get better than that!
Sourdough is always better. When you add sourdough starter (or sourdough discard) and let your mixture sit overnight, it will have the benefits of long fermentation. This means some of the phytic acid will be stripped from the grain, making it easier to digest. Whether you long ferment, use discard or fed starter, or just whip this up in a pinch, this recipe will work out perfectly each time.
Einkorn – the new sourdough! I have been saying for a while that einkorn flour is the new sourdough because everyone is catching on to it nowadays. With the rise of gluten sensitivity, people are looking for more gluten friendly options but want to still enjoy bread products. Einkorn is about 30% lower in gluten and 30% higher in protein than traditional wheat flour due to its non-hybridized, original grain form. This means that it’s healthier, more nutritious, and also easier to digest. This is why we love it!

For this sourdough brownie recipe, you can either use discard or fed starter. The dough can be mixed and baked on the same day, or you can mix the dough, let it sit overnight in the fridge, and bake it the next day. This option will give you more of the long fermentation benefits, but all the options make brownies that are great.
The key to a fudge, chewy brownie
To get that fudgy, chewy brownie consistency, it’s important to melt the butter and mix it with the chocolate before adding it to the flour and the rest of the ingredients.
Chef’s tip: Instead of chocolate chips, try melting your favorite organic chocolate bar (we like Theo’s chocolate!). It’ll add even better flavor to your homemade brownies!

Double Chocolate Sourdough Einkorn Brownies Ingredients
1 stick butter
1 1/2 cups chocolate chips or chopped organic chocolate bar
1/2 cup cocoa powder
2 tbsp vanilla extract
1/4 cup maple syrup
2 eggs
2 egg yolks
3/4 cup brown sugar
1/2 cup white sugar
1/2 cup sourdough starter
1 1/4 cup einkorn flour
1/2 tsp salt
1 1/4 cup cranberries (optional)
How to Make Double Chocolate Sourdough Einkorn Brownies
Preheat oven to 350 degrees F and line an 8×12 baking dish with parchment paper.
On the stove, combine butter, chocolate chips, cocoa powder, vanilla, and maple syrup and stir until combined. Once melted and combined, remove and let cool.
Meanwhile in another bowl whisk together eggs, sugar, and starter. Stir in the flour and salt.
Add the chocolate mixture and cranberries to the flour mixture and stir to combine.
Pour brownie mixture into the parchment-lined baking dish.
Bake for 30-35 minutes or until a knife inserted in the middle comes out clean.
